I love experimenting with new recipes in the kitchen. However, I rarely measure ingredients. I love throwing things together, tasting them as I go, and adjusting as needed. This isn't always possible, but I have a blast when it is. J decided to whip up some homemade pico de gallo in which we used the same "as we go" technique. The ingredients below are rough estimates as we chopped and diced when we thought necessary. Although he did majority of the preparing, I must say I was a very good supervisor...
Pico De Gallo Ingredients:
6 tomatoes
4 onions
2 green jalapenos
1 bunch of cilantro
1/2 cup of lime juice
1/2 cup of lemon juice
2 tablespoons of salt
(Remember, you can change the measurements to your taste. Our friend Blake said it was spicy, so if you aren't keen on too much of a hot kick, feel free to leave out the jalapenos!)
Pico De Gallo Ingredients:

Chop the tomatoes and onions into small cubes. Chop cilantro thinly. Jalapenos should be used according to your tolerance for spicy foods.
Mix ingredients in a bowl. Add in lemon juice, lime juice, and salt. Stir with lots of oomph.
Enjoy with chips, on salads, on the side of rice, in burritos, etc! What's your favorite type of salsa?
