The weather has been absolutely gorgeous lately (no more rainstorms!), so the boys and I decided to have a BBQ night. I helped make the guacamole; six large avocados (mashed), one large onion (chopped) lemon and lime juice to taste, and salt. Vinnie had the bright idea to to add in some pico de gallo that we had made a couple days earlier (recipe here), which added a great spicy tomato and jalapeno vibe to the dish. I started eating before the meat was even cooked!
Vinnie and J were the grill masters. They bought chicken, carne asada, hamburgers, and bacon to throw on the grill, and although I only ate the chicken, it all looked delicious! The fajitas were cooked to perfection and so tasty. The key is to season them with salt and oregano. Make sure you're grilling them on a safe surface, as the heat of the grill can burn or warp some metal pans. Keep an eye on them, as you don't want them to get too soggy or burnt.
Not sure why that pesky little chip is shielding the guacamole, but maybe he liked it as much as I did! :) The chicken was cooked to perfection, so maybe I'll be more attentive next time to the boys' cooking patterns so I can learn how to grill myself. I think we will add mushrooms into the fajita mix next time, too.
