As someone who is constantly on the go, I am always looking for what is convenient and easy, especially when it comes to food.
Fridays are typically late start days for me; my only ones, actually. I don't go in to work until the afternoon, so I try and sleep in as much as I can. Unfortunately this schedule will be changing in the coming weeks, so I am trying to soak up all the extra zzzzzzs I can get!
I felt like a smoothie and decided to play around with some new ingredients. I typically have smoothies after rugby practice or gym sessions. However, I wanted to try out some different consistencies for this breakfast smoothie and added in the new Greek yogurt I purchased a couple days prior: The Greek Gods Greek Yogurt.
My mom is a huge fan of plain Greek yogurt and always requests that I bring her some when I get groceries. I picked up the Greek Gods Greek Yogurt at Albertson's because, well, the price was good. I didn't plan on having any myself as I'm more of a vanilla girl. However, I felt like the protein would be beneficial and decided to try it out.
When I opened the tub, I was surprised to see that the consistency was much different than Chobani and Voskos. My mom later said it was very similar to cheesecake filling and I have to agree with her. It isn't smooth or milky looking, but it's fluffy and light weight.
Here's the recipe I came up with. Feel free to adjust the portions to your liking. (I threw in the soy milk because I couldn't resist vanilla!) I chopped the banana into smaller pieces to make more space. I blended all the ingredients together for about 20 seconds as I'm partial to thick, creamy smoothies. I was really happy with the way this one turned out and even happier that it kept me full through lunch!
Apollo Smoothie

1 tablespoon Smart Balance Creamy Peanut Butter
1 cup Plain Greek Gods Yogurt
1 cup Silk Very Vanilla Soy Milk
I'll be picking up some more plain for my mom and I plan to try out the vanilla next. According to their website, they also have Honey Orange, Honey Strawberry, and Vanilla Cin/Orange. Yumm! Added bonus: All the yogurts are gluten free.
