It fuels you for your daily activities and can give you the energy boost you need to have a successful day. Stay away from foods like Pop Tarts and sugary cereals and focus on getting your protein and veggies. My mom loves making power green omelettes; they're quick, easy, and nutritious.
More and more stores are selling packs of "power greens", which consist of spinach, kale, and argula. I purchase the packs at Trader Joe's, Costco, and Sprouts. They're pre-washed, so it's easy to throw bunches of the greens into virtually all the meals I make.
1. Lightly spray your pan with cooking spray. I use Simple Truth Organic.
2. Fill the entire pan with a layer of power greens. Cook for 30 seconds.
3. Add in eggs and a dash of salt and pepper. Cook for one minute.
4. Add in toppings like mushrooms, onions, and tomatoes. Cook until eggs are ready.
