If brunch was a person, I'd probably marry him/her. Breakfast foods later in the day? Yes, please! I rarely get to sleep in, so being able to enjoy my first meal mid-morning or around noon is quite a treat. I wound up at one of my favorite laid back brunch spots a couple weeks ago (forgot to post, oops!) and chowed down on my favorite dish, a breakfast quesadilla. Warm, scrambled eggs topped with cheese, stuffed into a perfectly crisp tortilla. I asked for fresh salsa on the side and used it, along with ranch and sour cream, as toppings for the quesadilla. I chose cut seasonal fruit instead of rice and beans on the side; much healthier and tastier, in my opinion. Hold on a second, let me wipe the drool off my keyboard...
Okay, I'm back! J had a Mexican Scrambler that consisted of eggs, cheese, avocado, vegetables, and torn up tortilla strips, quite similar to the Mexican dish "chilaquiles", which is also a favorite of ours. He normally has steak and eggs when we are there, but this was a yummy change.
I'm going to have to try and recreate these scrumptious meals with less calories and organic ingredients at home. And, yes, you bet your bottom dollar I'll eat it all at noon!
